One of Fay’s earliest memories is peeling potatoes for a vegetarian cafe at the festivals where her parent used to work, when she was just 6 years old. Another memory was being so engrossed in a make-believe cake making game in the garden, that she forgot what she was doing and a greedily took a big bite of the glorious huge “chocolate” gateaux (which was in fact made of the finest locally sourced, organic mud.)
An autoimmune condition that caused her to become allergic or intolerant to most food staples coupled with the desire to feed two young daughters a healthy diet while living on a very tight budget fueled Fay’s natural passion to love and cook with a whole new range of ingredients.
Settling in Spain for a few years influenced Fay’s style of cooking greatly. She loves creating vegan alternatives to classic Spanish dishes and a good quality olive oil is one of her most essential ingredients.
Fay describes her cooking as a healthy fusion of worldwide styles with a heavy Mediterranean bias. In a nutshell it is wholesome plant based fuel for a healthier happier you.
Fays passion for food and travelling is prevalent when you meet her. You can currently find her working on retreats in the UK and beyond for Adventure Yogi, cooking for guests and volunteers at Sueno Verde eco project in Spain, and working as an event chef at the Skip Garden Project. Fay runs an eco-project in North West Spain when she isn’t working in the UK.
When she’s not cooking she is also a therapist at Neal’s Yard Remedies as well as a Yoga and Pilates teacher.
In her free time, you can find her hanging out with her daughters, dogs and friends as much as possible.
